严格食品标准利弊的争论
甘蔗没有两头甜,我们就再说一说不甜的那头。
首先,一种观点认为,严格的标准造成了一些物质浪费.
但是,有人并不同意这种说法,他们反驳说,严格的食品标准并不意味着靠浪
费物资去维持,严格的标准只是要求有较高的管理水平。如果从生产到销售各个环
节都重视食品标准,浪费是可以避免的。就像在8点钟开会,不一定比10点钟开
会迟到的人数多一样。如果与会者认为会议十分重要,迟到的自然会少。
毫无疑问,严格的标准会促使生产者竭力改良品种,采用先进技术。比如你很
难在超级市场看到小个的桃子杏子,不是美国的土地不长僵桃瘪杏,而是果品等级
订立的严格,次等货不能摆上超市柜台,那些品质差的果树,自然被农场主淘汰了
。这不应该说是浪费,而应该说是进步。
所以,用“严格标准造成浪费”去质疑strict食品标准,未必成立,所以,
这个观点,先放在那里存疑待考。
下面一点,应该是可以得到大众共鸣的——美国食品加工的严格标准,带来了
饮食业的单调。在美国很难出现类似成都小吃、台北大排档那样丰富多彩的特色食
品。如果你抱出一坛子酱小菜,说这是祖传秘方配制,鲜美无比,敬请各位品尝,
欢迎光顾。FDA首先就找麻烦,别说化验你的配料,看着你怀里揣的那个坛坛罐
罐就不顺眼,FDA条例,接触食品的器具,只有规定的不锈钢和其他有数的几样
材料。
流动食品小贩更是困难,他们不可能背上个冰箱沿街叫卖,所以流动摊贩制作
最精致的食品就是“热狗”——面包一掰,香肠一夹……从佛罗里达到阿拉斯加,
都是一个味道。
有人说做一个美国人,少了不少口福,也有人说做一个美国人避免了不少口祸
。两方都说得对,功过都源于FDA。
保持口福,防止口祸的FDA还没出现。
